Chicken Handi

Chicken Handi is a popular and flavorful dish in Pakistani and North Indian cuisine, known for its rich, creamy gravy and tender pieces of chicken cooked in a traditional ‘handi’ or clay pot. The word ‘handi’ refers to the vessel in which the dish is traditionally cooked, adding a unique flavor and texture to the preparation.

The preparation of Chicken Handi typically begins with marinating pieces of chicken in yogurt, garlic, ginger, and a blend of spices such as cumin, coriander, turmeric, and chili powder. This marination not only adds flavor but also helps tenderize the chicken.

To cook Chicken Handi, a special emphasis is placed on slow cooking and using a ‘handi’ or a heavy-bottomed pan. Ghee (clarified butter) or oil is heated in the handi, and finely chopped onions are sautéed until golden brown. This caramelization of onions adds a sweet undertone to the dish and enhances the overall flavor.

Once the onions are caramelized, the marinated chicken is added to the handi along with additional spices like garam masala, fenugreek leaves (kasuri methi), and sometimes ground nuts (like almonds or cashews) for richness and depth of flavor. Fresh tomatoes are also a key ingredient, adding acidity and helping to create a thick and flavorful gravy.

As the chicken simmers in the handi, it releases its juices and combines with the spices and other ingredients, creating a rich and aromatic gravy. Towards the end of cooking, a mixture of cream and sometimes a small amount of tomato paste or puree is added to further enhance the creamy texture of the dish.

Chicken Handi is typically garnished with fresh cilantro (coriander) leaves, ginger julienne, and occasionally a drizzle of fresh cream or a sprinkle of garam masala for added flavor and presentation. It is served hot, straight from the handi, and is enjoyed with naan (flatbread), roti (unleavened bread), or rice, providing a satisfying and complete meal.

The slow cooking process in a handi allows the flavors of Chicken Handi to develop fully, creating a dish that is not only rich and creamy but also packed with layers of aromatic spices and tender chicken.
