Malai Rabri

Malai rabri is a sumptuous dessert that celebrates the richness of cream (malai) in its preparation. To create malai rabri, whole milk is first heated in a wide, heavy-bottomed pan over low heat. As the milk warms, a layer of malai (cream) begins to form on the surface. This creamy layer is gently skimmed off and reserved.

The remaining milk is then simmered on low heat for several hours, allowing it to gradually reduce and thicken. During this process, the malai that was skimmed off earlier is gradually added back into the milk. This not only enriches the texture of the rabri but also intensifies its creamy flavor.

To sweeten the rabri, sugar is added according to taste preferences. Fragrant cardamom powder may also be included to enhance the aroma and add a subtle spice note to the dessert.

The result is a luscious, creamy dessert with a thick, custard-like consistency that is both comforting and indulgent. Malai rabri can be served warm or chilled, depending on preference. It is traditionally garnished with slivered almonds, pistachios, or even saffron strands, adding a delightful crunch and visual appeal to the dessert.
